Carrot Zucchini Bread Recipe

Ya know those days when you just want a piece of cake, but you don’t want all that post-dessert guilt? This is the recipe for you! This carrot zucchini bread is my go to favorite!

You’re probably thinking, “zucchini in a cake? uh… no thanks.” TRUST ME, my friends are always surprised to find out there’s a hidden veggie!

I LOVE making this bread. My 1 year old loves this bread. It’s a hit all around! I like to freeze about half of the bread right away and save it for later. It reheats really nicely in the oven. I even made it for my son’s first birthday party and covered it with cream cheese frosting. DELICIOUS!

Dry Ingredients

  • 3 cups flour
  • 1 cup sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon grated nutmeg
  • 1 cup chopped nuts (I used walnuts here, but hazelnuts are also nice)
  • 1 tablespoon ground flax seed (optional, adds a little health kick)

Wet Ingredients

  • 1 ripe banana
  • 2 eggs, beaten
  • 1.5 teaspoons vanilla extract
  • 1/2 cup vegetable oil
  • 1-2 cups peeled and grated carrots
  • 1-2 cups peeled and grated zucchini
*I used a food processor to chop the carrots and zucchini, but you can definitely do this by hand or buy them pre-chopped*

Directions

Preheat oven to 350F (180C). Mix together all dry ingredients in one bowl. In a separate bowl, mush the banana. Add in the rest of the wet ingredients, including the carrots and zucchini, and mix together. Combine the wet and dry ingredients into one bowl, and mix all together. You’ll still have pieces of carrot and zucchini sticking out, and that’s totally fine.

Line your baking dish with cooking paper, and pour your mixture into the dish. (The cooking paper is optional, but I think cake removal is WAY easier this way. The other option is to put oil in your baking dish and pour in mixture directly)

Bake for 40-50 minutes. Once the top is golden brown (maybe even a little dark brown) and a toothpick or fork comes out clean, your cake is done! ENJOY!

Have you ever tried a similar cake? What are your favorite desserts that have hidden vegetables? Let me know in the comments!

This looks so good. I love how chunky the veggies are. No pureeing those babies for you! I think I love the dark crust it makes, too. It makes it seem elegant as well as healthy!

I’ve only had zucchini cake a couple of times, I wasn’t a fan of it in large quantities but this looks tasty. Thank you for sharing it.

This looks so good for breakfast. I would put honey butter on it. So many people have leftover zuchinni from harvest too.

Sorry about the allergies. I really like this one because you can remove the sugar if you want, use a gluten free flour, every modification is possible. Let me know if you try it!

Zucchini bread and banana bread are staples around our household this time of year. I have never added carrots but I sure will now! This looks awesome and I love the fact that you made this your sons first birthday cake.

That’s awesome Kristin! I actually made a totally different cake for his cake smash photo shoot and he didn’t eat any of it! I’m secretly thrilled that he’ll choose the healthy version over a normal cake ?

I’m definitely going to have to try this one. I make a mean banana bread and an awesome zucchini bread but never together and no carrots in either. Fingers crossed the clan likes it:)

    Cheers!

I love these types of breads! So yummy. It makes me almost forget that I’m ingesting any carbs haha. Seriously though, what a delicious alternative to white bread toast in the morning.
