Ya know those days when you just want a piece of cake, but you don’t want all that post-dessert guilt? This is the recipe for you! This carrot zucchini bread is my go to favorite!
You’re probably thinking, “zucchini in a cake? uh… no thanks.” TRUST ME, my friends are always surprised to find out there’s a hidden veggie!
I LOVE making this bread. My 1 year old loves this bread. It’s a hit all around! I like to freeze about half of the bread right away and save it for later. It reheats really nicely in the oven. I even made it for my son’s first birthday party and covered it with cream cheese frosting. DELICIOUS!
- 3 cups flour
- 1 cup sugar
- 1.5 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon grated nutmeg
- 1 cup chopped nuts (I used walnuts here, but hazelnuts are also nice)
- 1 tablespoon ground flax seed (optional, adds a little health kick)
- 1 ripe banana
- 2 eggs, beaten
- 1.5 teaspoons vanilla extract
- 1/2 cup vegetable oil
- 1-2 cups peeled and grated carrots
- 1-2 cups peeled and grated zucchini
*I used a food processor to chop the carrots and zucchini, but you can definitely do this by hand or buy them pre-chopped*
Preheat oven to 350F (180C). Mix together all dry ingredients in one bowl. In a separate bowl, mush the banana. Add in the rest of the wet ingredients, including the carrots and zucchini, and mix together. Combine the wet and dry ingredients into one bowl, and mix all together. You’ll still have pieces of carrot and zucchini sticking out, and that’s totally fine.
Line your baking dish with cooking paper, and pour your mixture into the dish. (The cooking paper is optional, but I think cake removal is WAY easier this way. The other option is to put oil in your baking dish and pour in mixture directly)
Bake for 40-50 minutes. Once the top is golden brown (maybe even a little dark brown) and a toothpick or fork comes out clean, your cake is done! ENJOY!
